Coconut Fudge No Bake Cookies


My mom always made no bake cookies growing up. In fact, they're one of my dad's favorites to this day. Sometimes when my siblings and I were teens and needed our dad to help us fix something or give us a ride, we'd use no bake cookies to sweeten the deal.
Last Father's Day I even combined his love of no bake cookies with coconut, which is this recipe.
This recipe is also friendly to those with milk allergies! The chocolate taste is so strong, I've never known anyone to notice when I sub milk free ingredients.





Ingredients:

1 cup sugar
1/4 cup butter or milk free margarine (like Nucoa)
1/4 cup milk or rice milk
1 tablespoon cocoa powder
2 cups quick oats or rolled oats
1/3 cup shredded coconut, firmly packed
2 tablespoons peanut butter
1 teaspoon vanilla extract

Directions: 

1. Add sugar, butter, milk, and cocoa powder to a small saucepan over medium heat, stirring frequently until it reaches a boil.

2. Boil exactly 1 minute.
It's important to time it so that your cookies will solidify correctly.


3. Immediately remove from heat and stir in the quick oats, coconut, peanut butter, and vanilla.
 Using a cookie scoop, drop on a pan lined with either a silicone baking mat (pictured) or wax paper.





 4. Chill at least 30 minutes or until set. Serve.
