3. Combine oatmeal, chocolate chips, nuts, dried cranberries, brown sugar, and flour.<br />
4. In separate bowl combine peanut butter, canola oil, and corn syrup.<br />
5. With a sturdy wooden spoon combine the oatmeal mixture with the peanut butter mixture. Press into the pan.<br />
6. Bake 30-35 min at 350 F. until edges are brown. Everything will be really soft. The bars will firm as they cool.<br />
7. Cool completely. Slice and serve or store in an airtight container or bag.<br />

I'm a huge pancake fan. This is a version you bake in your oven, so there is less hands-on time. It would make a great brunch treat. Powdered sugar on top is yummy, but syrup is always good too.<br />

My 3-month-old baby boy finally went down for a nap this afternoon and so I was able to get a few things done, including making this recipe. This is the third time I have made it and it has always turned out a success, so I figure it's ready for sharing on the blog.<br />

3) In a large bowl stir together white flour, wheat flour, brown sugar, cinnamon, baking soda, salt, and cloves.<br />

4) Add the prepared oatmeal, eggs, oil, and vanilla to the bowl and stir well. Pour into prepared baking pan.<br />

5) In a small bowl, use a pastry blender or fork to cut together the topping ingredients. If you're making a milk-free recipe, use either milk-free margarine or coconut oil. Sprinkle topping over batter.<br />

These are great for breakfast, dessert, or a 3 a.m. snack. They don't need refrigeration, but I think they're extra delicious that way. These are a good example of something that you can make to suit your mood: When I really want something healthy, I use oatmeal in the place of the coconut flakes and substitute all raisins instead of half raisins and half chocolate chips. On other days, I use these to indulge my sweet tooth and eat the recipe as written.<br />

These are so easy -- just stir, scoop, and refrigerate for 20 minutes. Notice they require <b>no cooking or baking</b>, so I have made them countless times over the summer.<br />

3) Using a cookie scoop form into balls and place on a tray. Refrigerate 20 minutes, and then serve. Cover leftovers and either store in the fridge or on the counter.<br />

I prefer to store mine in the fridge so they are a cold snack to help me beat the heat. Of course, I'm pregnant and always looking for ways to cool down.<br />

Why is it that you can have the same breakfast for weeks and not get tired of it, but you are always looking for a unique dinner idea that everyone likes?</div>

I love enchilada sauce, but wanted to change it up a bit. I thought, what if instead of a dish with tortillas saturated in the sauce and baked, I instead had crispy tortillas cooked on the stove that you dip into the sauce? I thickened the sauce to make it better for dipping.</div>

2) Garnish with tomatoes and serve with enchilada sauce to the side. Repeat with other tortillas and filling. </div>

1/2 a large yellow onion, diced<br />
1-2 tablespoons olive oil<br />
1 pound ground turkey or beef<br />
2 tablespoons fresh finely chopped cilantro (I used the food processor to chop mine)<br />
2 teaspoons chili powder<br />
1 teaspoon cumin<br />
3/4 teaspoon salt<br />
1/2 a bell pepper, diced<br />

Taco Meat Directions</h3>
<br />
1) Over medium heat in a large frying pan, cook onions in 1 tablespoon olive oil until beginning to brown, about 5-8 minutes.<br />
<br />
2) Add ground turkey or beef and lightly salt and pepper. Break up and cook until browned, about 6-8 minutes. Drain off any liquid fat.<br />
<br />
3) In a small dish combine chili powder, cumin, and salt. Add to browned meat and add 1/3 cup water and stir. Cover, bring to a boil, and then turn to low and let simmer 5 minutes.<br />
<br />
4) Remove from pan and add 1 tablespoon olive oil and cook diced bell pepper 2-3 minutes until slightly browned but still firm. Stir into meat mixture.<br />

2 cloves garlic, pressed<br />
2 tablespoons chili powder<br />
2 teaspoons cumin<br />
1/2 teaspoon salt<br />

6 ounces tomato sauce<br />
2 tablespoons cornstarch<br />
3 tablespoons water<br />

Enchilada Sauce Directions</h3>
<br />
1) In a small saucepan over low heat, cook garlic in olive oil until fragrant, 2-4 minutes. Whisk in chili powder, cumin, and salt, and cook 1 minute more.<br />
<br />
2) Whisk in chicken broth, 1/2 cup at a time and add tomato sauce and increase heat to medium. Bring to a boil.<br />
<br />
3) In a small dish whisk together cornstarch and water and stir into sauce to thicken. Turn down to low and simmer for 10 minutes.<br />

1) Slice strawberries. Place strawberries and 1/4 cup sugar in a small saucepan over low heat. Mash and stir strawberries with a wooden spoon. It will look dry at first, but in a few minutes the strawberries will emit juice.<br />

2) After the sugar is dissolved and the strawberries are juicy, continue stirring and raise the temperature to medium heat. Bring to a low boil and then turn down to simmer for 5 minutes. Taste and add up to 1/4 cup more sugar if needed. This will depend on how sweet the strawberries you used are.<br />
<br />
3) In a small dish whisk together the cornstarch and water until smooth and then stir into the simmering topping until thickened. Serve warm.<br />

2) With an electric mixture, cream together shortening (or butter) and brown sugar. Add eggs, vanilla, baking soda, and salt and beat until combined. Mix in the flour. Using a wooden spoon, stir in the dry quick oats. The dough will be very thick.<br />

3) Press dough evenly into a greased 9 x 13 inch pan. Pour the sweetened condensed milk over the dough and smooth with a spatula. Sprinkle the chocolate chips over the top. Bake at 350 F. for 25 to 30 minutes until the crust is browned.<br />

4) Cool at least 2 hours, and then cut into squares to serve.<br />

1) Mix together flours, sugar (for a sweet dessert) and salt. Add to your food processor (I use my large Ninja blender). Add softened butter and shortening and pulse 4-5 times until it resembles coarse crumbs.<br />

2) While pulsing, put vanilla (for a sweet dessert) and 1 tablespoon water into the food processor. Scrape sides with a spatula and add water through the spout 1 tablespoon at a time while pulsing, scraping the sides frequently. When a cohesive dough ball forms, stop adding water.<br />
<br />
3) Remove from food processor, form into a ball, cover, and refrigerate at least 45 minutes or up to a day. On a lightly floured surface, roll to desired shape and bake as directed in your pie recipe.</div>

I told her I wanted pumpkin pie. Some adults would have told the 9-year-old that you don't eat pumpkin pie in July, and to pick something else. I'm lucky the adults in my family all thought it was a great idea. I still have pumpkin pie for my birthday every year.<br />

<a name='more'></a>This recipe is so flavorful and simple. It actually comes from my other grandma. I made a half recipe, which made 1 regular pie and 6 little ones.<br />

I didn't get a picture of the full-sized pumpkin pie because I made it at night and then took it to a charitable auction. It sold for $65! Yes, I thought that was crazy, but it was for a good cause. The family's nine-year-old daughter told me, "Thanks for making our pie." I told her to thank her dad for paying for it.<br />

The next morning in the daylight I got some pictures of one of the mini pumpkin pies. I pulled the mini pies out 20 minutes before the regular pie.<br />
<br />
If you only make a half recipe and so have leftover pumpkin puree, you can freeze it in an ice cube tray and use it to make single servings of <a href="http://somebodysdinner.blogspot.com/2014/09/pumpkin-oatmeal.html" target="_blank">pumpkin oatmeal (recipe)</a>. <br />

3 single pie crusts, unbaked<br />
3 1/2 cups pumpkin puree (28 ounce can)<br />
3 cups sugar<br />
1 tablespoon cinnamon<br />
2 teaspoons powdered ginger<br />
1 teaspoon salt<br />
3 cups milk<br />
4 eggs<br />

Directions</h3>

1) Mix together pumpkin puree, sugar, cinnamon, ginger, and salt in a large bowl. Is a separate bowl whisk together milk and eggs until well blended. Add the milk mixture to the pumpkin mixture and stir well.<br />
<br />
2) Pour into unbaked pie crusts. Cover the edges with tin foil to prevent over-browning, which you'll remove 10 minutes before it's done. Bake 10 minutes at 450 F, then <b>reduce heat</b> to 325 F and bake 45 minutes until the middle is set. To determine if it's set, carefully jiggle it to tell if the inside is still liquid or not.<br />

3) Cool on a wire rack until room temperature and then refrigerate at least 1 hour.<br />

I have two tricks. I've developed them because my <a href="http://somebodysdinner.blogspot.com/2014/01/golden-rolls.html" target="_blank">Golden Roll Recipe</a> can turn out a little bit different each time: the Golden Rolls are very tasty and no one guesses that their pretty golden color comes from something healthy, carrot puree. But I think carrot puree in yeast bread is a bit of an inexact science. Sometimes I can work with the dough easily; other times, not so much.<br />
<br />
<h3>
My first trick makes pretty crescent rolls</h3>
<br />
1) Lightly flour a surface and then spray your hands with cooking spray.<br />
2) Carefully cut off enough dough for 8 rolls (my recipe uses 3 cups flour, so I break the dough ball in half.) If when you gently handle the dough, it still sticks a lot to your greased hands, work in a small amount of flour, a tablespoon at a time.<br />
3) Form the dough into a sphere so it will be easier to roll out into a perfect circle.<br />
4) The dough is probably too sticky to use a rolling pin. Instead, press into a circle with your greased hands. Don't worry if your can't press it as thin as you eventually want it.<br />
5) Cut like a pie into 8 pieces. Remove a piece, press flatter with your hands, and then roll up starting at the large end of the triangle. Repeat with other pieces. If desired, brush tops with melted butter.<br />
6) Let rise until double, then bake as directed in your recipe.<br />

My next trick is faster and easier -- Muffin-Shaped Yeast Bread</h3>
<br />
1) Grease a muffin tin and a cookie scoop. After the dough has risen once, punch it down. Use the scoop to put dough into the muffin tins, filling each 2/3 the way full. This usually takes about 2 scoops of dough into each. With greased fingers, turn the dough over.<br />
2) Let rise double and bake as directed in your recipe.<br />
<br />
And if you take them somewhere, everyone will tell you, "These muffins taste like bread!"<br /><h2><br /></h2>

This cute pumpkin wreath will help dress up your door for fall. I think it's cute for both Halloween and Thanksgiving. The pumpkins remind me of pie, and I love everything that reminds me of pie.<br />
Another great thing about this wreath base is that I can pull off the pumpkins and put on decorations for other holidays: the pumpkins are attached with straight pins rather than glue, so it's easy to exchange the pumpkins for another decoration, like Shamrocks for Saint Patrick's Day.<br />

<a name='more'></a>I actually started this wreath last year; a friend invited several people over for a wreath making party. It was lots of fun and we tried some new things, including using pipe insulation to form a wreath. This did not work. Pin fail! The wreath, despite the pumpkins being light, sagged a lot and didn't keep its shape. This year I pulled off the pumpkins and bow, and made my own DIY wreath from a pool noodle. So far it's held its form well.<br />
<br />
Just as a side note, after making this wreath, I saw that you could buy a small Styrofoam circle from Dollar Tree, ready to be covered and decorated. That's a good option too, although the pool noodle makes a bigger wreath. Also, I already had the pool noodle.<br />

Materials</h2>

1 pool noodle<br />
Duct tape<br />
3/4 yard white knit fabric<br />
Straight pins<br />
Fabric squares of fall fabrics, cut to 3 x 3 or 4 x 4 inches<br />
Cotton<br />
Burlap<br />
Thin sticks for stems<br />
Twine<br />

Directions</h2>

1) Use duct tape to secure the pool noodle into a loop. I used quite a bit, wrapped around several times, to make sure it stayed.<br />
<br />
2) Cut the white knit fabric into long strips about 3 inches wide. The knit fabric won't fray. Wrap the strips around the pool noodle until you can no longer see the pool noodle's color. This took about 3 layers. Secure with straight pins.<br />
<br />
3) To make the little pumpkins, fill a fabric square with cotton, gather the top together, and trim any excess fabric. Place the stem (stick) inside and then tie with twine. If desired, tie a bow.<br />
<br />
4) Using straight pins, attach pumpkins to the wreath. Use burlap to tie a loop and a bow at the top. Then hang up your wreath and enjoy!<br />

4) Combine cooked lentils, Bulgar, the cooked vegetables, cilantro, lime, and pepper. Taste and add salt if needed--my broth had enough salt to flavor my pilaf, but you may need to add more.</div>

Tip: I used a small cup to plate the pilaf. Just pack it in the cup, place a plate on top, flip over, and remove dish. My father-in-law uses that trick to plate fried rice. You can use dessert dishes instead of cups too.</div>

3) Using electric beaters, cream together shortening and brown sugar. Add egg, cinnamon, salt, and nutmeg and blend. Add white flour, wheat flour, and applesauce and blend. 1/4 cup Ranch dressing (bottled or homemade)</div>

2-3 cloves fresh garlic</div>

2-3 strips bacon, cooked until crispy and then crumpled</div>

3/4 cup shredded mozzarella cheese</div>

1) Preheat oven according to pizza crust directions.</div>

2) Mince or press garlic cloves and stir into the Ranch dressing. </div>

Yes, this is the secret to really amazing sauce. Simply adding fresh garlic will give it a dynamic taste. The garlic will cook a little as the pizza bakes to release its flavor.<br />

3) Spread the garlic Ranch sauce on the pizza crust, and top with about 1/3 of the bacon. If desired, add shredded spinach. Putting some bacon below and above the cheese is my other secret.<br />

4) Top with cheeses, chicken, jalapeno, and remaining bacon. Bake according to pizza crust directions until cheese is melted, slightly browned, and delicious looking.</div>
