Chicken Nuggets--healthy option

Crispy chicken nuggets will make your picky eaters--and yourself happy. The fact that it's lean chicken with flour, egg, breadcrumbs, and spices will make this guilt free. Just serve it with vegetables.




Directions

1) Preheat oven to 400 F with baking sheet inside.

2) Cut 1 chicken breast into 2 inch pieces. You will dredge each piece in the flour mixture, coat with egg, then coat in the breadcrumb mixture. (Recipes below). Place on a large plate.

3) Remove pan from preheated oven. Quickly spritz with non-stick spray. Put chicken on pan and bake 12-15 minutes, flipping halfway through. Seve when brown and crispy.

Flour mixture:
1/2 cup flour 
2 tablespoons cornstarch

Egg:
2 eggs, whisked

Breadcrumb mixture:
1 cup breadcrumbs--try a recipe for homemade breadcrumbs.
1 1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon sugar



Coat in flour, then egg, then breadcrumbs.
My fingers got hilariously dirty from this activity.

My husband likes his with hot wing chicken sauce and mustard. Yum!
