Cinnamon Fingers

Happy Pi day!
I already shared Frito Pi(e) with you, but here's something else. If you're making a pie with a traditional crust, you probably will have some dough scraps leftover. Why not make leftover pie dough into cinnamon fingers? Or, if you're craving them, just whip up some dough just for this recipe.




My mom says growing up they would cut extra dough into strips, sprinkle on cinnamon sugar and bake on a cookie sheet while the pie baked. While that's a great idea and saves on energy, I find it's easier to monitor by cooking it on the stove.

Ingredients

Pie dough scraps
Cinnamon sugar*

*A good ratio is 4 parts sugar to 1 part cinnamon, or 1/4 cup sugar to 1 tablespoon cinnamon. I keep some in a shaker to sometimes put on buttered toast.

Directions

1. Heat a small frying pan on the stove to medium heat or medium low.

2. Meanwhile, roll out extra pie crust. Cut into strips. Sprinkle with cinnamon sugar. Cook covered for 2-3 minutes, or until browned. Flip and cook another 1-2 minutes until browned. Eat.

Put a lid on while it cooks.
