Breadcrumbs

Make your own breadcrumbs. Why pay several dollars for breadcrumbs when you can make yours from bread scraps at home?

I usually use breadcrumbs either to coat chicken (like shake and bake), or to put on baked casseroles, like baked spinach or homemade macaroni and cheese.

Breadcrumbs are great for making the breading on chicken nuggets.

Ingredients

Bread, including stale pieces and heels no one will eat. (But not moldy bread)

Directions

Preheat oven to 300 F and bake bread 15-20 minutes until dried. The fresher the bread, the longer you'll have to bake it to dry it out. The low temperature will help the pieces dry out thoroughly without burning the insides.

When dry, use a food processor or a blender to break it into crumbs.

These 7 pieces made 3 cups of breadcrumbs.

While some sources, including Alton Brown say that you can keep homemade breadcrumbs at room temperature for up to 2 months, I prefer to keep mine in the freezer up to 6 months, taking out as much as I need.
