Cucumber Cilantro Salad with Chicken

I got a vegetable spiralizer tool, which is a lot of fun. Cucumbers and zucchini are my favorite vegetables to make into spirals. If you don't own one, this salad is also yummy with cucumber half circles.




Ingredients


1/4 cup apple cider vinegar
3 tablespoons sugar
3 tablespoons lemon juice
3 tablespoons olive oil
1/2 teaspoon pressed fresh garlic
1/4 teaspoon salt
1/8 teaspoon garlic powder (yeah, I know. I used both fresh and powdered)
1/8 teaspoon dried dill
1 1/2 cups cooked chicken cubes
1 bell pepper, diced
1/2 cup fresh cilantro, chopped in a food processor
1/4 cup onion, chopped fine in a food processor
1 large cucumber
3/4 cup diced cabbage (or use 1/2 a cucumber more)
4 large carrots, sliced
2 teaspoons sesame seeds

Directions


1) Combine apple cider vinegar, sugar, lemon juice, olive oil, garlic, salt, garlic powder, and dried dill. Add cooked chicken, bell pepper, cilantro, and onion. Let sit at least 10 minutes to allow the flavors to combine.

2) Shortly before serving, use a spiral tool to make cucumber "noodles." Add cucumbers, cabbage, carrots, and sesame seeds to the salad. Add salt and pepper to taste.
