Ever make a recipe and have leftover pumpkin puree? I freeze mine in ice cube trays to make into smoothies, shakes, and oatmeal, especially this time of year. This easy pumpkin oatmeal is hardy and delicious with lots of pumpkin flavor, brown sugar, and raisins. This breakfast is definitely inspired by pumpkin pie!
I usually make oatmeal with water, but in this recipe I like milk, probably because it reminds me of the milk base of pumpkin pie. I think the extra creaminess is totally worth it.

Ingredients
2/3 cup milk
1/3 cup old fashioned oats
About 1 1/2 tablespoon pumpkin puree (1 pumpkin ice cube)
1 tablespoon raisins
1 tablespoon brown sugar
1/2 teaspoon cinnamon
Dash of salt
Directions
1) Combine all ingredients in a large microwave safe dish, like a 2 cup glass measuring cup. Microwave for 3-5 minutes on high, stirring every minute until oats are tender and most of the liquid is absorbed. Watch for overflow. If desired, serve with more milk.
