Shredded Wheat Apple Muffins

What do you do with the crushed Frosted Shredded Wheat in the bottom of your cereal box?
If you want, the crumbs could be baked into some yummy muffins.







Oven: 400 F.
Yield: 12-14 muffins

Ingredients


1 cup crushed Frosted Shredded Wheat cereal*
2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 large apple, peeled and diced
3/4 cup milk
1/3 cup canola oil
1 egg
1 tablespoon lemon juice

Glaze


1/2 cup powdered sugar
1/2 teaspoon cinnamon
1 tablespoon lemon juice

*I have used both original and strawberry flavors of Frosted Shredded Wheat. Pictured is the strawberry.

Directions


1) Preheat oven to 400 F. Grease 12 muffin cups.

2) In a medium mixing bowl, combine cereal, flour, sugar, baking powder, cinnamon, and salt. Stir in diced apple.

3) In a measuring cup, whisk together milk, oil, egg, and lemon juice. Stir into dry ingredients until just combined.

4) Fill greased muffin tins 3/4 full and bake 18-22 minutes at 400 F. until browned.

For Glaze


Combine powdered sugar and cinnamon. Stir in lemon juice. Glaze should be thick. Add more powdered sugar or some water if necessary for desired consistency. Drizzle 1 teaspoon of glaze on each muffin.
